Plant protein, olives, and seasonal produce
Though most appetizer boards celebrate animal products, there are plenty of plant-based items that can be combined to make a comprehensive spread. This one, which serves four to six, includes two alternative meat products: jackfruit jerky and vegan chorizo, along with a nut-milk based cheese sprinkled with salt and pepper, sliced jicama garnished with spices, and olives. Protein-rich almonds are served alongside boldly-colored radishes, pears, and raw baby broccoli. Dip the fruits and vegetables in a simple vinaigrette made from oil, apple cider vinegar, salt, and pepper.
