Swap seaweed in for tortillas, with delicious results.

Inspired by Japanese hand rolls and easy entertaining, Denver-based recipe developer Julia Heffelfinger created three “tacos” in which nori (seaweed) replaces the usual tortilla. She recommends laying out all the ingredients in a DIY bar for a low-stress weeknight meal or a healthy, interactive dinner party. 

Nori (which is good for thyroid function and filled with vitamins and minerals) is sold in large sheets at specialty stores and online. Cut the sheets into smaller squares, and serve with fiber-rich steamed brown rice, colorful vegetables, and sesame-miso sauce. “People can fill the seaweed with creamy crab and cucumber salad, raw salmon tossed with tamari and sesame oil, or crunchy radishes with yuzu and ginger,” Heffelfinger says. Feel free to mix and match the toppings, customizing your own tacos as you go.
