Lactation Granola & Yogurt Parfaits

With a seasonal fruit compote to elevate your breakfast

Busy moms don’t have a lot of time to spend on their meals. “But eating beautiful foods is a form of self-care,” says Marissa Lippert, RD, a New York City-based nutritionist and founder of Nourish Baby. Although this parfait is simple to make, it feels like an indulgence, thanks to layers of creamy yogurt and fresh fruit. As an added bonus, the granola contains ingredients, such as oats and fenugreek, to boost your milk supply.

Seasonal Fruit Compote Ingredients

  • 4 cups seasonal fruit of your choice (berries, peaches, apples, apricots, or pears)
  • 1/2 cup organic sugar
  • 2 teaspoons water
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice
  • Tiny pinch kosher salt

Lactation Granola Ingredients

  • 2 pounds (about 10 cups) oats
  • 3 tablespoons white sesame seeds
  • 1/2 cup plus 1 1/2 tablespoons tahini
  • 1 1/4 cup ghee
  • 1 1/2 cups maple syrup
  • 2 tablespoons brewer’s yeast
  • 2 tablespoons fenugreek seeds, toasted and ground
  • 2 tablespoons vanilla extract
  • 2 tablespoons cinnamon
  • Maldon Sea Salt Flakes
  • 2 cups 70% dark chocolate, roughly chopped
  • 2 cups golden raisins

Parfait Ingredients

  • 1/2 cup whole-milk grass-fed or organic yogurt
  • 1 tablespoon seasonal fruit compote
  • 1/4 cup lactation granola
  • Seasonal fresh fruit (optional)

Directions

  1. For the fruit compote, stir together all ingredients in a large bowl. If desired, add in a dash of cinnamon or nutmeg; 1 teaspoon lime or lemon zest; 2 teaspoons dried lavender, rose petals, or hibiscus; or 2 to 3 sprigs of lemon thyme or scented geranium. Set aside.
  2. For the granola, preheat oven to 300°F. In a large mixing bowl, combine oats and sesame seeds; set aside. In a separate bowl, stir together tahini, ghee, maple syrup, Brewer’s yeast, fenugreek, vanilla, and cinnamon.
  3. Add dry ingredients to wet and combine well. Spread mixture onto a parchment-lined baking sheet. Lightly sprinkle with Maldon salt.
  4. Bake for 30 to 40 minutes, or until golden with crisp edges. Remove and let cool completely.
  5. Gently break granola into pieces. Mix in chocolate and raisins. Store in an airtight container in a cool area, out of direct sunlight, for up to eight weeks.
  6. For one parfait, layer all ingredients in a glass or cup. If desired, top with fresh fruit.
