“Using a store-bought rotisserie chicken is an easy hack for saving time,” says San Francisco-based chef Lynda Marren. Use one fork to hold the chicken steady. In the other hand, use another fork to pull the meat away from the bones, scraping the chicken flesh into small, shredded pieces. This results in fluffier pieces and is easier than using your hands. Or, place chicken breasts or thighs into the bowl of a stand mixer and begin mixing on the slow setting, gradually turning up to medium until the meat is shredded.
