This nut-free dressing requires just five ingredients.
“Nothing says spring like this fresh Provençal sauce,” says Philadelphia-based recipe developer Robert Luessen. The garlic helps regulate blood sugar levels and the olive oil adds healthy fats. Try it drizzled over your favorite salads or with lean proteins like fish and turkey.
Yields ⅔ cup
- 2 cloves garlic, minced
- 2 cups parsley leaves, stems removed
- 1/2 cup extra virgin olive oil
In a food processor, combine garlic and parsley. Pulse to combine until parsley leaves are well broken down. Slowly drizzle in olive oil until all is incorporated.
Scrape down sides and season to taste with salt and pepper.
Transfer to an airtight container and store in the fridge for up to one week.
