Chilled black bean and kale salad

Green apple relish adds bright, tart flavor to this vegetarian dish.

“Black beans and egg give this dish plenty of protein, while cucumbers add a refreshing crunch,” says Seattle-based chef Dana Tough of ChefSteps.

Ingredients

½ kale, chopped
½ cup black beans
¼ cup diced cucumber
1 tablespoons green apple relish
1 lemon, juiced
⅓ cup crumbled feta
Salt
Pepper

Directions

In a bowl, combine kale, black beans, cucumber, relish, and lemon and mix well. Place in an airtight container. In a separate container, place the feta and the egg with the shell still intact. Store everything in the fridge.

Peel the egg and cut it in half.

Transfer salad to a bowl and top with feta and egg. Season with salt and pepper as desired.
