BBQ Pork Tenderloin

A healthy, make-ahead take on a cookout favorite

This recipe from Seattle-based chef Dana Tough of ChefSteps puts a Southern spin on a lean cut of pork. “Black beans and kale provide fiber to help you feel fuller, longer,” adds Tough.

  1. In a bowl, combine chopped kale, black beans, and season with salt and pepper as desired. Place the mixture in an airtight container. Place the pork and sauce in two separate containers and store everything in the fridge.

  1. Place your beans and kale in the microwave on high for 75 seconds. Then place your pork in the microwave next to the beans and kale and microwave everything for 45 seconds. Enjoy with salt and pepper as desired.

    Note: The pork can take anywhere from 30 to 45 seconds depending on microwave power. The goal is only to gently heat the pork back up. If too high of power is a concern, try defrost mode. It heats a little more gently.
