Mediterranean Tortilla Wrap

Quick-pickled onions add savory crunch to this vegan dish.

Ingredients

  • 1 tortilla (grain-free optional)
  • ⅓ cup microgreens
  • ⅓ cup spinach
  • ¼ cup cooked couscous
  • ¼ cup vegan chipotle sauce
  • ¼ cup feta
  • 4 3-inch cucumber wedges
  • ¼ cup quick-pickled onions
  • 6 Kalamata olives, pitted and halved lengthwise
  • 2 sun-dried tomatoes, thinly sliced

Simple Snack

  • 4 to 6 radishes sliced in half
  • ½ red bell pepper, slices
  • ¼ cup hummus

Directions

  1. Place the tortilla on a flat surface. Spread the hummus down the center leaving two to three inches on all sides.
  2. Layer the wrap with the ingredients in order of their appearance.
  3. Roll the tortilla up, tucking in the two ends. Place in an airtight container.

  1. Slice the tortilla wrap in half and serve next to the veggies dipped in hummus.
