Corn Dosa and Tomato Salad

This Indian-inspired recipe is ready in just 15 minutes.

"This healthy version of a dosa, or corn pancake, is delicious topped with the protein-packed Middle Eastern condiment, labne," says Katzie Guy-Hamilton, chef and director of food and beverage at Equinox.


  • 1 cup corn kernels
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • ⅛ teaspoon ground cumin
  • 3 tablespoons water
  • 2 tablespoons parmesan cheese
  • ¼ cup chickpea flour
  • ⅛ teaspoon baking powder
  • 1 tablespoon olive oil or coconut oil

For the Heirloom Tomato Salad

  • 1 large handful arugula
  • 6 basil leaves
  • 2 tablespoons labne
  • 1 cup heirloom tomatoes, sliced into thick pieces
  • 2 tablespoons roasted tomatoes

For the Dosa

  1. In a blender, place all the ingredients except the oil and blend until smooth.

  2. Heat a large non-stick skillet over medium heat.

  3. Add 1 teaspoon oil and spread evenly to coat the pan.

  4. Ladle half of the corn mixture onto skillet and spread into a thin layer by rotating the skillet.

  5. Cook for one minute on each side. Repeat with remaining batter. 

  6. Store in an airtight container.

For the Heirloom Tomato Salad

  1. Place arugula at the bottom of a salad container.

  2. Add tomato slices, basil leaves, and roasted tomatoes, then top with labne.

  3. Store in the fridge.

At Your Desk

  1. Dress salad with items from the condiment kit as desired.

  2. Warm dosa in the microwave for 45 seconds (or serve at room temperature).

  3. Enjoy dosa with fresh tomato and labne salad.
