GREEN GODDESS AQUAFABA DRESSING

This creamy classic gets a vegan makeover.

This version of green goddess gets its creaminess from a surprising source: the liquid in canned chickpeas, also known as aquafaba liquid. Lightened by acidic lemon juice and bright herbs, it makes a refreshing dip or salad dressing for both parents and kids, says Marissa Lippert, RD, a New York City-based nutritionist and owner of Nourish Baby, a food-delivery service for parents and newborns. Use it to introduce young ones to a condiment that isn’t ketchup.

Ingredients

  • 1 garlic clove, minced
  • 3 tablespoons lemon juice
  • 3 tablespoons aquafaba liquid
  • 1 cup basil, loosely packed, chopped
  • 1 tablespoon tarragon, chopped
  • ¼ cup minced chives
  • Salt
  • Black pepper
  • 1 cup grapeseed oil

Directions

  1. In a food processor, blend garlic, lemon juice, aquafaba liquid, basil, tarragon, chives, salt, and pepper. Slowly drizzle in grapeseed oil until emulsified. Store in an airtight container in the refrigerator for up to 1 week.
