Chai-spiced oatmeal

This breakfast has hints of vanilla, cinnamon, and cardamom.

Cardamom, star anise, cinnamon, and peppercorn turn plain oatmeal into a spiced bowl that kids love, says Marissa Lippert, RD, a New York City-based nutritionist and owner of Nourish Baby, a food-delivery service for parents and newborns. Pears and raisins add extra sweetness and fiber. Cook a batch on Sunday, then warm it up with a little extra milk for the whole family to enjoy during the week.

1 teaspoon green cardamom pods
½ teaspoon black peppercorns
1 star anise
1 pear, unpeeled and diced
1 tablespoon golden raisins
2 cups rolled oats
¼ teaspoon vanilla extract
¼ teaspoon cinnamon
1 tablespoon maple syrup
½ cup water
2 cups milk (dairy, nut, or oat)
Pinch of salt


Using a small piece of cheesecloth, make a sachet with cardamom pods, black peppercorns, and star anise.

In a sauce pot, add the sachet and remaining ingredients. Stir gently and cook over medium-low heat for 7 to 10 minutes, until oats are fully cooked and pears are soft. Serve immediately or cool and store in the refrigerator.
