“Whipping tahini with water lightens the paste in terms of both thickness and color,” says New York City-based recipe developer Laura Rege. “Use ice water which keeps the delicate sesame oils in tahini stable against the heat of the blender, promoting a nice smooth flavor.”

Place tahini, lemon juice, garlic, and turmeric in the bowl of a food processor and pulse until very smooth, occasionally adding ice water until the mixture lightens in color and desired consistency is achieved. Season with salt and pepper.
