Romanesco Buckwheat Groats Bowl

“Olives add briny flavor and a nice Mediterranean-inspired element to this dish,” says Philadelphia-based recipe developer Robert Luessen. It pairs well with nutty, gluten-free buckwheat and can be topped with the lean protein of your choice such as hard-boiled eggs.

Ingredients

  • 1 head Romanesco broccoli, cut into florets
  • 2 tablespoons olive oil, divided
  • Salt
  • Pepper
  • 1 cup buckwheat groats
  • 1 avocado, pit removed and diced
  • ¼ cup cilantro leaves

Directions

To Serve
