Spinach Matcha Muffins

Ingredients

  • 2 large bananas
  • 1 cup old-fashioned oats
  • 1 teaspoon matcha
  • ½ teaspoon baking powder
  • 1 cup spinach

Directions

  1. Preheat the oven to 350 degrees and place four liners in a muffin tin.

  2. Place the bananas in the blender and pulse until smooth.

  3. Add the remaining ingredients and blend until smooth, then evenly divide mixture among the liners.

  4. Bake for 15 minutes, or until a toothpick inserted in the center comes out clean.

  5. Let the muffins cool then store them in an airtight container in the fridge until ready to eat.
