Steamed Bok Choy and Tofu

This vegan dish comes together with just five main ingredients.

A staple in Chinese cuisine, “bok choy is a type of cabbage that is rich in vitamins A, K, and C,” says Seattle-based chef Dana Tough of ChefSteps. “It pairs well with protein-rich tofu that can be dressed up with your favorite sauce or condiment.”

  • 2 cups bok choy, thinly sliced
  • 1 cup firm tofu, diced
  • ½ cup onion puree
  • 1 tablespoon pickled ginger, thinly sliced
  • 3 tablespoons almond slivers
  • Lemon
  • Salt
  • Pepper


  1. Place bok choy and tofu in a microwave-safe container and top with the onion puree. In a separate container, place the pickled ginger, almond slivers, and lemon.

At your desk

  1. Microwave the bok choy and tofu for 2½ minutes. Place in a serving bowl and garnish with pickled ginger and almond slivers. Season with salt, pepper, and fresh-squeezed lemon.
