Pumpkin Seed Pesto Flank Steak

A healthy, fall-inspired take on the classic protein

“This dish calls for a seasonal pesto made with protein- and omega 3-rich pepita seeds,” says Seattle-based chef Dana Tough of ChefSteps. “It’s the perfect way to add earthy, autumn flavors to any protein.” 



  1. Place the farro and spinach in an airtight container. Place the steak and pumpkin seed pesto in two separate containers and store everything in the fridge.

At your desk:

  1. Place the farro and spinach in a microwave-safe bowl and cook for 2 minutes on high. When there is 30 seconds left, place your sliced steak into the microwave and finish for the remaining 30 seconds. Take out of the microwave and dress with the pumpkin seed pesto and lemon juice. Season with salt and pepper as desired.
