Apple relish pork tenderloin bowl

Apples are an autumn superfood, but they’re not all created equal. This recipe from Seattle-based chef Dana Tough of ChefStepscalls for Granny Smiths, a variety that has 13 times more phytonutrients than a Ginger Gold.

Ingredients

1 cup black kale, julienned
2 tablespoons golden raisins
1 tablespoon toasted pine nuts
1 lemon, juiced
Salt
Pepper
5 ounces pork tenderloin, sliced
2 tablespoons green apple relish

Directions

In a mixing bowl, combine kale, raisins, pine nuts, lemon juice, and mix well. Place in an airtight container. In two separate containers, place the pork and relish. Store everything in the fridge.
