Green Goddess Marinade

Upgrade roasted chicken with this easy, flavorful dressing.

“Go beyond simply seasoning protein with salt and pepper,” says chef Natalie Mortimer, who co-founded The Modern Proper with fellow chef Holly Erickson. “This dressing for spatchcocked chicken is packed with fresh herbs and has a bright flavor thanks to the lemon zest.”

Yields 2 cups


  1. In a high speed blender, combine all ingredients and blend until smooth. Place in an airtight container and store in the fridge for up to two weeks.


  • 2 scallions
  • 1 small shallot, quartered
  • 1 ¼ cup packed cilantro
  • 1 cup packed basil leaves
  • ¼ cup packed mint leaves
  • 3 tablespoons fish sauce
  • 4 small garlic cloves
  • 1 lemon, zested
  • 2 tablespoons lemon juice
  • 2 nectarines, peeled and pitted
  • 2 teaspoons salt
  • 1 teaspoon red pepper flakes
  • 1 teaspoon freshly ground black pepper
