Chicken Chile Verde

You only need 8 ingredients for this healthy soup.

  • 1 cup sous vide chicken, diced
  • ½ cup salsa verde
  • ½ cup corn
  • ½ avocado
  • 8 cherry tomatoes, sliced
  • 4 sprigs pickled cilantro
  • Salt
  • Pepper


  1. In an airtight container, combine the chicken, salsa verde, and corn.

  2. In a separate airtight container, place the avocado, cherry tomatoes, and pickled cilantro. Store everything in the fridge.

At your desk:

  1. Microwave the chicken, salsa verde, and corn for two minutes on high. Slice the avocado and add as a topping along with cherry tomatoes and pickled cilantro. Season with salt and pepper as desired.
