He's on to something by adding an egg to an already healthy menu item. Avocados are known as good sources of fiber, antioxidants beta-carotene, vitamin E, and heart-healthy fats. And the egg makes it even better for you. A recent study found that adding an egg to veggies (in this case, a chopped-up a hard-boiled egg to a big salad) makes your body better able to absorb carotenoids (which help protect your body against chronic diseses). And, according to a study that came out earlier this year from the University of Eastern Finland, eating an egg a day isn’t linked to coronary heart disease. So, all the fear mongering about eggs and dietary cholesterol is likely unfounded.
Plus, Winser’s addition of spice to this dish has some added value. The chilli in the hot sauce contains capsaicin, that, among its many benefits, helps you feel fuller, faster, according to researchers at the University of Adelaide in Australia.
Here, Winser’s very simple instructions for making this extremely healthy dish:
In a medium bowl, prepare an ice bath. In a large pot over medium heat, bring a quart of water and 1 Tbsp white wine vinegar to a boil. Cook 4 eggs, 6 minutes; transfer to ice bath. Divide 2 avocados, mashed, among 4 slices of olive oil-drizzled toasted country bread. Top each slice with a pinch of salt, an egg, a pinch of red chili flakes, a dash of hot sauce and 1 Tbsp fresh cilantro.
